orange turban cake

This is one of those ‘family’ recipes, where it’s all just word of mouth and quick notes jotted down, so it’s probably a heavily bastardised version. But it is super yummy.

Quick tip- make it a day ahead and let it soak in the syrup overnight.

Ingredients:
250g butter
3 x egg yolks
1 x cup sugar
1 x cup sour cream
1 x grated orange rind
1 3/4 cups plain flour
1 tsp baking powder
1 tsp baking soda
3 x egg whites

Method:
-beat eggwhite until stiff but not dry. Set aside
– cream butter and sugar, then add egg yolks, sour cream and orange rind to the mix. Beat until light and fluffy
-sift and fold flour, baking soda, baking powder into the mix
– fold in eggwhites.

In a greased turban mould (oil & flour) bakr for 1 x hr at 325f (150c), then let stand 10 mins

For the syrup:
Juice of 2 x oranges
Juice of 1x lemon
3/4 cup sugar
Pinch of salt

– mix together in saucepan and boil for 3-4 mins, until thick. Slowly pour over cake until absorbed.

Serve with creme fraiche or sour cream….and then, if you’re me, eat some more, until it’s finished. And diet for the rest of the month.
